Steamed Artichokes

Prep Time: 1 hour (sort of)
Cook Time: 45 min.
What You Will Need:
4 Artichokes
2 Lemons, quartered
½ Onion, chopped
What You Do:
1. Trim the spines off of the leaves
2. Cut off the woody stem
3. Soak in water for 30 – 60 minutes
4. Put Chokes in large pot with Lemons and Onions and the water coming
half-way up the chokes.
5. Boil for about 45 minutes (test a leaf for doneness)
6. Melt some butter for dipping
7. Let Chokes cool for a moment then pounce on them!
My wife has been making this since I met her. I hadn’t had artichokes before so I was pleasantly surprised at the neat way to eat the leaves and the nuttiness of the heart.
