We are trying to use up food we have in the freezer to get ready for the move to Tennessee (more on that later).  We had some pinto beans in there that I made a while ago and I remembered I tweaked and toned some bean dip recipes to make a killer dip.  So I got it out and decided I wanted to make the bean dip but I also wanted to have a nice table salad with it so we could pick what we wanted to have on top. 

We went to Trader Joe's yesterday and got some avocado, green onions and tomatoes.  I already had some onions to grill, purple onion and black olives so all that became the table salad.

It was tremendous so I wanted to share it with you.

Deviled Eggs

Deviled Eggs are  one of my favorite things to eat.  I always looked forward to them as a kid and still do (and I’m not a kid anymore).  My Mother-in-Law will make them for a Sunday lunch or dinner and I always look forward to them.  It’s really just another way to eat eggs and it is really easy to do.  They are also fun to serve to people when they come over because it’s just not something you usually get anywhere.

Lunch Today

Man!  It was difficult to get lunch (and dinner) together for today.  I had lined something up for 7:30 this morning at my house but the person didn't show.  But I had spent my time getting ready and didn't get around to making a lunch I could take.  Of course, I could buy a lunch but I knew I could come home at lunch and figure something out.

So I had some salad mix and various things in the fridge.  I added some black olives, grape tomatoes, and cheese, then heated up some leftover chicken and some leftover bean sprouts and added that.  But I didn't have a dressing.  I saw the Avocado Cream sauce from fish tacos the other night so I added some Mexican seasoning, thinned it with some water and I had a beautiful salad and a delicious dressing!

The Truth Behind Zoodles

I don't know if everyone in the world has heard of zoodles but it sure does seem like it.  If you have heard of paleo or, god forbid, are doing the paleo diet then you do know what zoodles are and you are going to really like what I'm going to tell you here. 

As you can see from the above picture, zoodles are zucchini that have been run through a spiralizer to make "zoodles" for spaghetti substitute.  I won't go into it much here but a spiralizer is a type of machine that, well, makes spirals out of fleshy vegetables.  I'll do a post on spiralizers later. 

The problem with zoodles is that they are watery since zucchinis are full of water so you have to get the water out of there somehow.  Some sites tell you to salt them, let them sweat then squeeze them out.  This is fine except it's a lot of work and this site is about ease and making cooking fun so we really didn't want to do that.  We've done it before and it's just a pain - too, too much.  Another way is to boil them.  We've done this.  Guess what?  Add a watery vegetable to water and hope for something non-watery why don't you?  It was watery, trust me.

Last night we decided to saute them to see if that would be an easier way.  It was!  We heated a pan, sauteed the zoodles for about 5 minutes then put them in a colander over a plate and they turned out tremendous.  And we could control the amount of crunchiness ourselves.  We topped it with some tomato sauce from a jar that I doctored up and we had a delicious, easy, paleo, dinner.

Pork Carnitas in a Slow Cooker

Pork Carnitas Recipe

I've made this before but I used the oven in stead of the slow cooker.  I used a Dutch Oven (which, if you aren't sure what that is, go to my "What is That?" page and I'll explain) and set the temperature for low (about 250 degrees) and let it cook for 6 hours or so.  Came out great. 

So we were talking about the food we were going to make for this week.  We have been going over on our grocery budget lately so we tromped to the freezer to see what we could use for our vittles this week.  We had half of a Picnic Shoulder in there from the time we made Braised Mexican Pork and decided to do Carnitas.  Now, carnitas just means little pieces of meat usually put into tacos so we knew it wasn't some time-consuming dish so we said, yeah, let's do that. 

I wanted to make my recipe but she wanted to try a new one she saw at The Kitchn.  That one used a slow cooker so I gave in and we tried that one.  I think my seasonings are better but theirs was easy and still satisfying.

She is doing this 7-day Paleo quick-cleanse and we try to eat paleo as much as we can so we decided instead of noodles we would put it over cabbage.  Well, I didn't want just cabbage so I made a Honey-Lime Vinaigrette to go over the cabbage then put the pork and it's yummy juices on top of that.

I gotta tell ya, this was a delicious dish, although the seasoning could have been tightened up a bit, and we will make it again with some minor adjustments.

Fried Rice

Fried Rice is something everyone needs to know how to cook, it's fairly easy and is always a crowd pleaser.  I make it different every time depending on what food I have on hand to put into it.  You need to have rice that is already cooled or else it won't work.  Cut up the veggies ahead of time and you're doing well.  This is a little time consuming but after you do it a couple of times it gets really easy.  You can add any meat you happen to have on hand.

Do Ahead:
1.  Cook the rice and cool.  Needs to be cooled.
2.  Prep the onions and carrots
3.  Scramble the eggs

What You Need:
3-4          c.           Cooked Brown Rice
2             TB         Oil – or less if you want
1                           Onion – Diced
2-3          cl.          Garlic
3                           Carrots – Sliced Diagonally (Or Whatever)
1              c.          Peas or Snow Peas
1             TB         Soy Sauce
1 ½         tsp.        Sesame Oil
3-4                       Eggs – Scrambled

What You Do:
1.  Heat a Wok or large pan big enough to mix stuff around in.
2.  Pour oil in Wok and let get hot.
3.  Add the Onions and cook about 5 min.
4.  Add the Carrots and cook another 5 min. or so
5.  Add the Garlic and Peas and cook another 5 min. or so
6.  Add the Rice, Soy Sauce and Sesame Oil and stir all around.
7.  Add the Scrambled Eggs and then serve.

Asian Glazed Chicken Thighs in Slow Cooker

Chicken thighs deliver a lot of flavor and the sauce adds just the right amount of punch.   We made this for dinner and fell in love with it.  It is extremely easy and you can serve it over anything you want.  The original sauce called for Hoisin but I didn’t have any so I just substituted with Orange Marmalade ‘cause is sounded good.  And it was.


What You Need:

2          TB        Maple Syrup
3          TB        Hoisin Sauce ( I used Orange Marmalade)
2          TB        Olive Oil
2          TB        Soy Sauce
1 ½      tsp.      Dijon Mustard
1          tsp.      Minced Garlic
½         tsp.      Red Pepper Flakes
2          lbs        Skinless, Boneless Chicken Thighs
¼          tsp.      Salt
¼          c.         Water
2          TB        Cornstarch or Arrowroot

What You Do:
1.  Whisk the 1st 7 ingredients together
2.  Salt the Chicken and place in slow cooker.  Pour sauce over Chicken.
3.  Cook it on low for 5 hours
4.  Remove Chicken with slotted spoon.  Turn it on high.
5.  Whisk Cornstarch and water and pour into sauce.  Whisk until thickened.
6.  Serve over whatever you want to serve it over

What You Will Need:

6                      Boiled Eggs
1          T          Mayonnaise
½         t           Mustard (your choice what kind)
2          t           Sweet Pickle Relish
                        Salt
                        Pepper

What You Do:

1.  Cut the eggs in half and scoop the yolks into a bowl.
2.  Add the rest of the ingredients and mash together with a fork.  (or whatever)
3.  Pipe or scoop into the egg whites
4.  Some people sprinkle with paprika.   You can do that if you want.

Tuna Salad

This falls under the category of “Things You Should Be Able to Make”.  Tuna salad is a staple we’ve all had all our lives but a lot of people don’t make it anymore yet it’s so easy and gratifying to do.  This, of course, is just my basic recipe.  You might have to add a little more mayonnaise but this is the standard Tuna Salad. 

Once you’ve made it a couple of times you can change it up by adding anything that sounds really good to you.  Experiment and have fun.

What You Will Need:

3          cans     Tuna
3          ribs      Celery
3                      Hard-Boiled Eggs
½+       cup      Mayonnaise
6          TB        Sweet Relish (less for less sweet)
½         tsp       Granulated Garlic
½         tsp       Salt
¼          tsp       Black Pepper

What You Do:
1.  Drain the cans of Tuna
2.  Slice and chop the eggs
3.  Cut the Celery into little slices or chop into pieces
4.  Mix Everything together with a fork.
5.  Adjust seasonings as needed
