Easy Lunch Salad
When I want a salad during the week I just put one together adding anything else I can think of like green peas, roasted almonds or rice crackers for crunch. You really can cook/make that with just a little pre-planning.

Easy Lunch SaladSo every week-end I make fresh salad mix and it takes about 20 minutes to do the salad and the toppings. I get out my chopping board and go to town. I cut up romain lettuce and throw it in a big bowl. I then get my bag of shredded carrots or broccoli slaw, chop in into smaller bits and toss it with the lettuce. I then put this in big bag or some plastic containers and throw it in the fridge. Then I get out my toppings and chop them into bits to put on top of the salad. This can be zucchini, yellow squash, peppers, jicama or whatever and I mix them together and put them in the fridge as well.

Man! It was difficult to get lunch (and dinner) together for today. I had lined something up for 7:30 this morning at my house but the person didn't show. But I had spent my time getting ready and didn't get around to making a lunch I could take. Of course, I could buy a lunch but I knew I could come home at lunch and figure something out.
So I had some salad mix and various things in the fridge. I added some black olives, grape tomatoes, and cheese, then heated up some leftover chicken and some leftover bean sprouts and added that. But I didn't have a dressing. I saw the Avocado Cream sauce from fish tacos the other night so I added some Mexican seasoning, thinned it with some water and I had a beautiful salad and a delicious dressing! This falls under the category of “Things You Should Be Able to Make”. Tuna salad is a staple we’ve all had all our lives but a lot of people don’t make it anymore yet it’s so easy and gratifying to do. This, of course, is just my basic recipe. You might have to add a little more mayonnaise but this is the standard Tuna Salad. Once you’ve made it a couple of times you can change it up by adding anything that sounds really good to you. Experiment and have fun. What You Will Need: 3 cans Tuna 3 ribs Celery 3 Hard-Boiled Eggs ½+ cup Mayonnaise 6 TB Sweet Relish (less for less sweet) ½ tsp Granulated Garlic ½ tsp Salt ¼ tsp Black Pepper What You Do: 1. Drain the cans of Tuna 2. Slice and chop the eggs 3. Cut the Celery into little slices or chop into pieces 4. Mix Everything together with a fork. 5. Adjust seasonings as needed |
