I've made this before but I used the oven in stead of the slow cooker. I used a Dutch Oven (which, if you aren't sure what that is, go to my "What is That?" page and I'll explain) and set the temperature for low (about 250 degrees) and let it cook for 6 hours or so. Came out great.
So we were talking about the food we were going to make for this week. We have been going over on our grocery budget lately so we tromped to the freezer to see what we could use for our vittles this week. We had half of a Picnic Shoulder in there from the time we made Braised Mexican Pork and decided to do Carnitas. Now, carnitas just means little pieces of meat usually put into tacos so we knew it wasn't some time-consuming dish so we said, yeah, let's do that.
I wanted to make my recipe but she wanted to try a new one she saw at The Kitchn. That one used a slow cooker so I gave in and we tried that one. I think my seasonings are better but theirs was easy and still satisfying.
She is doing this 7-day Paleo quick-cleanse and we try to eat paleo as much as we can so we decided instead of noodles we would put it over cabbage. Well, I didn't want just cabbage so I made a Honey-Lime Vinaigrette to go over the cabbage then put the pork and it's yummy juices on top of that.
I gotta tell ya, this was a delicious dish, although the seasoning could have been tightened up a bit, and we will make it again with some minor adjustments.
