Braised Chicken Thighs with Button Mushrooms

What You’ll Need:
1 TB Olive Oil
4 – 6 Chicken Thighs
Seasoning salt
16 oz Mushrooms (sliced)
1 Onion (sliced)
1 Clove Garlic (minced)
1 ½ TB Flour
2 TB Tomato Paste
2 c. Chicken Stock
1 TB Fresh Rosemary (chopped) or 2 tsp. dried.
What You Do:
1. In a high-sided sauté pan, add oil at medium-high heat
2. Season the thighs with the salt
3. Place chicken skin side down and sear 3 -4 min. Sear other side 3-4 min.
4. Remove from pan.
5. Add mushrooms. Sauté 4-5 min.
6. Add onions and garlic. Sauté 4-5 min.
7. Sprinkle flour in pan. Stir often to make a roux, 4-5 min.
8. Add paste, stock & rosemary. Bring to a boil then reduce to a simmer uncovered.
9. Return chicken to pan skin side down cook 30 min. Turn over and cook 30 min.
10. Serve over rice
