Chicken and Sausage Gumbo
What You Will Need:
1 cup Oil
1 cup Flour
4 ribs Celery (sliced)
2 Green Peppers (chopped)
1 large Onion (chopped)
4 cups Chicken (cooked and shredded)
1 lb. Sausage (cooked and sliced)
1 bag Okra
2 quarts Chicken Stock
1 tsp Salt
1 tsp Thyme
1 tsp Garlic
1 tsp Oregano
1 ½ tsp Worcestershire Sauce
1 tsp Hot Sauce
What You Do:
1. Stir the oil and flour in a med. hot pan for about 30 min. to make roux
2. Add the veggies to slow the roux down and heat for 10 min.
3. Add the salt, thyme, garlic and oregano and stir it up for 5 min.
4. Add the okra, chicken worcestershire sauce, hot sauce and sausage and stir it up for 5 min.
5. Add the stock and bring to a boil
6. Bring down to a simmer for 1 hour or more.
