Vegetarian Chili

Cook Time           1 hour +

What You Will Need:
2              TB                          Oil
¾             c.                           Onions (chopped)
¾             c.                           Green Pepper (chopped)
¼             c.                           Jalapenos (chopped)
2              tsp.                        Garlic (from a jar)

½             tsp.                        Black Pepper
½             tsp.                        Salt
1              tsp.                        Basil
1              tsp.                        Oregano
½             tsp.                        Cayenne
5              TB                          Chili Powder
2              tsp.                        Cumin

2              28-oz cans              Crushed Tomatoes
½             c.                           Tomato Paste

1              14-oz can                Pinto Beans or Black-Eyed Peas
1              c.                            Rice (already cooked)

What You Do
1.  Cook the rice using my foolproof method
2.  Measure out all spices in a small dish
3.  Saute the Onions and GP’s in oil for about 5 min.
4.  Add the Japs and Garlic and stir for 2 min.
5.  Add the spices.  Stir and Cook for 3 -5 min.
6.  Add Crushed Tomatoes and Tomato Paste.  Mix well.
7.  Add the Beans or Peas.
8.  Bring to a boil then simmer for an hour or more.  Add water as needed.
9.  Add the brown rice and let it cook for 15 more minutes.

What You Do For Slow Cooker:
1.  Cook the rice using my foolproof method
2.  Put everything except the beans and rice in Slow Cooker and stir around.
3.  Cook on High for 4 hours or Low for 6 -8 hours
4.  Add the beans and rice and cook for ½ hour on High or 1 hour on Low
