Chipotle's Chicken Bowl Knockoff

What You’ll Need:
For the Chicken
2 ½ lbs Chicken (boneless, skinless thighs)
1 Recipe Chipotle Marinade
For the Rice
2 c. Rice (cooked)
2 tsp. Oil of choice
4 tsp. Lime Juice
1 tsp. Lemon Juice
½ tsp. Salt
2 TB Cilantro (chopped)
For the Bowl:
Lettuce
Cheese
Sour Cream
Salsa
What You Do:
1. Blend all of the chicken ingredients (minus the chicken!)
2. Mix them with the chicken and marinate overnight.
3. Heat a cast iron skillet (preferably) to medium high heat
4. Put the oven on 425 Degrees
5. Sear the chicken 3 minutes on each side
6. Put pan in oven and cook for 12 minutes
7. Mix all the Rice ingredients together (rice should be warm)
8. Place all Bowl ingredients on table.
9. Put Rice in Bowl, Chicken on Rice and have at it.
