Technique - Chopping Veggies - Carrots

Now, I could have easily left out this because really, anyone can hack at a carrot or celery but I wanted you to see, quickly, how I do it.  I peeled the carrots first  but what you see is what actually happened.  Don't be afraid to make the pieces un-uniform, it's all about you getting in there with your food so don't think there is some idea of perfection for chopping that exists out there.  It's whatever you do and the dish will turn out great no matter what.

It's easy to get caught up in the details of a recipe which is why I've left a lot out of mine. I want you to focus on the doing and not so much the perfecting. 

Here's what I did:
1.  Peeled the carrots and cut them in half to make the shorter and easier to deal with
2. Cut the carrot vertically so I had 3 or 4 long flat pieces.
3.  Made 2 or 3 long cuts to get them the width I wanted.
4.  Put the chop on them and got my pieces!

This works with potatoes and most veggies like this that you can think of.
