Green Pepper Philly Cheese Steak

What You Will Need:
8 oz. Thinly Sliced Roast Beef
8 slices Provolone Cheese
2 lg Green Bell Peppers
1 med Sweet Onion (sliced)
6 oz. Baby Bella Mushrooms (sliced)
2 TB Butter
2 TB Olive Oil
1 TB Garlic (minced)
Salt and Pepper - to taste
What You Do
1. Slice peppers in half lengthwise, remove ribs and seeds.
2. Heat a sauté pan to medium
3. Add butter, olive oil, garlic, mushrooms onions and a little salt and pepper.
4. Sauté until onions and mushroom are nice and caramelized. About 30 minutes.
5. Preheat oven to 400°
6. Add Roast Beef to the onion/mushroom mixture. Cook 5-10 minutes.
7. Line the inside of each pepper with a slice of provolone cheese.
8. Fill each pepper with meat mixture until they are nearly overflowing.
9. Top each pepper with another slice of provolone cheese.
10. Bake for 15-20 minutes until the cheese on top is golden brown.

This is basically a way to have your favorite sandwich while still adhering to Gluten-Free or Paleo and they are really easy to make. I make ‘em and take ‘em for lunch.
