Lettuce Wrap Chicken

Cook Time: 20 min.
What You Will Need:
2 Chicken Breasts (single lobes)
3 ribs Celery (cubed)
3 Carrots (cubed)
6 Spring Onions (sliced)
1-2 tsp Chopped Jar Garlic
2 tsp Cornstarch or Arrowroot
Sauce
1 TB Maple Syrup
1 ½ TB Soy Sauce, Tamari or Shoyu
1 ½ tsp Sesame Oil
Salt and Pepper
What You Do:
1. Cover Chicken in plastic wrap and pound until 1/2 – inch thick.
2. Slice into small cubes
3. Mix the Sauce ingredients while heating a pan to “5”
4. Sautee the carrots and celery for about 5 min.
5. Add the onions and sauté 5 min. more
6. Add the Chicken and sauté for 5 min. more
7. Add Salt, Pepper and Cornstarch. Stir for a few minutes
8. Turn the pan to “8”
9. Pour in the sauce and let cook for about 5 more minutes
Put some in a lettuce leaf and you'll think you're dining at P.F Chang's!
About Stove Top Settings
Use your own judgment on the cooking temperatures. On my electric stove top I would consider:
Low to 2 = Low
3 = Medium Low
4 go 5 = Medium
6 to 7 = Medium High
8 to 9 = High
To explain: Here is what these definitions mean to me:
Low - I would never “cook” on low. Low is for keeping the food hot before eating.
Medium Low – letting food “meld” together
Medium – this is where simmering happens and pan-frying
Medium High – for searing food and getting things real hot for some reason
High – you are now boiling your food or browning before turning down to 4.5
