Minestrone

What You Will Need:
3 TB Olive Oil
1 sm. Onion
2 Carrots
3 ribs Celery
4 cloves Garlic
1 tsp. Basil – Dried
¼ tsp. Rosemary – Dried
1 tsp. Oregano – Dried
1 tsp. Salt
½ tsp. Pepper
Parsley
1 can Diced tomatoes (drained)
1 can Cannellini Beans (drained)
1 can Kidney Beans (drained)
1 can Green Beans (drained)
8 c. Chicken or Beef Broth or a combination
3 sl. Bacon (reserve some grease)
4 c. Fresh Spinach (sliced)
1 c. Pasta
Parmesan Cheese for grating
What You Do:
1. Saute the onions and celery for 5 min.
2. Add the Carrots and Garlic and saute 5 more min.
3. Stir in all the seasonings and cook for 3 min.
4. Add ¼ cup of water and ¾ c. of beans in FP and blend
5. Add the Canellini, Kidney and Green beans, Diced Tomatoes & Broth & simmer for 20 min.
6. Cook the bacon and chop or crumble or whatever
7. Slice the spinach into somewhat smaller pieces
8. Add the Bacon, some bacon grease, the spinach and Pasta.
9. Cook for 20 more min.
10. Serve with grated Parmesan.
This is my own version of Minestrone that is easy and somewhat quick to make but it comes out tasting like a homemade, cooked-all-day soup. If you want something different and a little impressive, this is an easy soup to get you there.
