Pan-Fried Fish
Okay, that’s a crummy picture but I’m
working on that. this is a simple recipe
that turns out a restaurant-quality dish.
The extra step of soaking the fish in the milk, I think, turns out a
superior product. People love this every
time I make it so go ahead and try it.
I’m going to work on a gluten-free and paleo version but if you are not
either of those this recipe will work wonders for you. Another key is to make sure the pan is nice
up to heat before you put the fish in so it starts cooking and getting a crust
immediately.
What You Need:
For the Fish:
4 Fish Fillets – (tilapia and red fish work well)
2 c. Milk
1 tsp. Sugar (optional)
For the Coating:
1 c. Flour
¼ c. Cornstarch
½ tsp. Oregano
½ tsp. Thyme
¼ tsp. Sugar (optional)
½ tsp. Granulated Garlic
Salt & Pepper
For the Rest:
1 TB Oil
What You Do:
1. Heat the milk for 45 seconds in Microwave and stir in Sugar
2. Let the fish marinate in the milk for about an hour
3. Get the pan heated on medium
4. Mix all the Coating ingredients
5. Dredge the fish in the coating and fry on each side for about 5 minutes
6. Have lemons ready and pounce on the fish when done.
