My Story
I used to eat anything and everything especially when I was a kid and I had the metabolism to be able to do that. I was skinny and always on the go and I could eat three times my weight in food at every meal. I ate and ate and ate and no one could figure out where it was going. At family meals, even when I was finally full, my mother would look at the last scoop of mashed potatoes and say,"Finish off the potatoes for me will you?". "But mom," I'd say, "I'm so full I don't think I could eat another bite!". She would wipe the corners of her mouth and look at me and say, "Well, if you don't eat it I'm just going to have to throw it away!". She would act like I was the cause of world hunger so I'd scoop them onto my plate and finish the mashed potatoes, or the rice, or the beans, or the salad, or the meat...
The reason I'm mentioning this is the set up the fact that I like to eat and always have and it has always been a big part of my life. My first job was at McDonalds and I've been doing something in food ever since; I've worked in many, many restaurants and have owned a couple as well. I developed a salsa at one of these restaurants that I still sell in the Jackson area so I've been doing something with food since I was 16.
My wife and both like to cook and experiment with different cooking techniques and other cultures' cuisine. We rarely cook the same thing twice in a month unless we just absolutely loved it like the Chipotle Chicken or the Paleo Shepherd's Pie.
So pull up a chair and try some of these recipes, they've all been tested and you will love them.
