What You Can Do Ahead:
1. Toast the Pecans
What You Will Need:
1 ½ c. Mayonnaise
1 4oz jar Pimientos (drained)
1 tsp. Worcestershire Sauce
1 tsp. Onion (finely grated)
¼ tsp. Paprika
1 c. Pecans (chopped, then toasted)
1 8oz block Extra Sharp Cheddar Cheese (grated)
1 8oz block Sharp Cheddar Cheese (grated)
What You Do:
1. Toast the Pecans in a 350 degree oven for 8 – 10 minutes.
2. Grate the ES Cheddar on the small side of the cheese grater.
3. Grate the Sharp Cheddar on the large holds of the cheese grater.
4. Add the Mayo, Pimientos, WS, Onion and Paprika together and mix.
5. Add the Pecans and the Cheeses and enjoy.
The Scoop:
Everyone in the South needs to know how to make Pimento Cheese spread. It's really easy to make and is a nice snack as long as you don't overdo it since it is pretty darn rich. Make it then eat it at your own discretion.
This is a pretty big recipe so halving it the first time might be a good idea. Usually when I make it, I make the big batch and take some to work for my colleague to have since we only usually get it on special occasions.
You can leave out the pecans for a more traditional Pimento Cheese but they are really good in there. You can add anything that makes your heart happy like olives, capers, different kinds of cheeses, roasted garlic - just whatever sounds good to you.
