Easy Garlic Chicken

What You Will Need:
4 Chicken Breasts (single lobes)(chopped in 1-inch pieces)
¼ c. Soy Sauce or Tamari or Shoyu
Oil
1 sm. Onion (sliced in a pleasing way to you)
1 Red Pepper (sliced in a pleasing way to you)
3. c. Broccoli (torn into small-ish pieces)
1 TB Minced Garlic
1 tsp Arrowroot (optional)
¼ c. Chicken Stock (or water or whatever you want)
Red Pepper Flakes (optional)
Do Ahead:
1. Chop the Chicken in 1-inch pieces
2. Marinate Chicken in Soy in plastic bag for 1 hour. Mush it around every now and then.
What You Do:
1. Sauté the Onion and Red Pepper for about 5 min. in oil of your choice on MEDIUM
2. Throw in the Broccoli and cook for 5 more minutes.
3. Take veggies out and put Chicken in. Sauté for about 7 minutes
4. Add back the veggies, garlic, RPFs and Arrowroot and cook for 3 min. or so
5. Add the liquid and turn up to MEDIUM HIGH for about 4 min. Keep stirring.
6. Turn back down to MEDIUM and simmer until it looks just how you like it.
Serve with rice or noodles and add toppings if you want like Cilantro, Chopped Peanuts, Fresh Spring Onions – you get the picture.
