Chicken Salad

Marinade: 15 min.
Cook: 30 min.
Assemble: 15 min.
What You Will Need:
1 Chicken Breast (double-lobed) (marinated for 1 hour) (recipe below)
3 TB Celery (chopped)
1 TB Mayonnaise
1/4 tsp Rosemary
1/8 tsp Granulated Garlic
Salt & Pepper (to taste)
What You Do:
1. Chop the Chicken into ½-inch cubes.
2. Marinate for 1 hour in my Chicken Salad Marinade
3. Sear the chicken on each side for 5 min.
4. Cook for another 20 min. – until done
2. Mix it all together.
This is the Chicken Salad we used to make at my restaurant TG Armadillo’s in Harrisonburg Va. We had a grill in the kitchen so we would grill the chicken which of course was the best way to have it but I find that by getting a good sear on it then letting it cook it almost comes out the same.

What You Need:

2 TB Red Wine Vinegar
¼ c. Worcestershire Sauce
1 tsp. Cumin
2 tsp. Oregano
1 tsp. Garlic (granulated)
4 tsp. Rosemary
1 dash Tabasco
What You Do:
1. Mix ‘em all together and marinate something!
